History of mankind in the Alps is closely connected with milk. As food and profitable product it influenced the landscape, working methods and everyday life. Times have changed, what has remained the same is the quality of the Tirolean milk.
Centuries ago milk and dairy products like cheese and butter were used mainly for one’s personal needs. There was only a small number of farms who supplied the few towns with their produce. Only with the growth of larger urban settlements and the emergence of crafts and trades, the transregional trade of milk caught on.
In the second half of the 19th century dairy farming was professionalized. Farmers’ cooperatives and dairies were developed on the initiative of single farmers. The introduction of Agricultural Colleges led to an increase in the quality of dairy processing. Century old cheeses of high quality include “Jochberger” and “Zillertaler Emmentaler” and are popular exports.
If you wish to check the quality yourself you can visit the show dairy in Mayrhofen in Zillertal showcasing the entire cheese making process from cow to mouth. On a guided tour Visitors can learn about the history of a typical Zillertal cheese as well as general facts about how cheese is made.
For lovers of art there is a “peephole” featuring a variety of objects with reference to milk ranging from Cleopatra in her whey bath to a cheese harp. As visitors reach the end of the tour, they are treated to samples of the dairy's famous cheese. A variety of chunks, as well as fresh curds, is a great way to cap off an informative introduction to the world of cheese. And for those who want to take some cheese home for family and friends what better place than at the retail store, where all of the dairy’s products are available for sale.
