Goat husbandry has a long tradition in Tirol. In the past goats were an important source of income and food for many small-scale farmers. The goat milk was processed into cheese which, in past centuries, was often served instead of bread.
With its 180 goats Kratzerhof in Stubaital is a rather large goat farm. Most of the animals’ milk is processed into wonderful cheeses, ranging from creamy, mild spreads to pungent, crumbly discs to reinterpretations of favorite cow’s milk cheeses. Highlights include a red-smear cheese, a linden-ash coated cheese with cognac, a rock dust coated cheese, and a glacier cheese in olive crust. For the less adventurous gourmets there is a great selection of cheese that are creamy in texture and mild tasting.
The Munich-born farmer Elisabeth Span (nicknamed “Goat Lizzy” in town) takes great pride in her other very unique product: schnapps made from fermented goat milk. The recipe for this inimitable concoction is her closely guarded secret. Only one thing is for sure: it contains alcohol.
