The Mountain Cheese Dairy Zillertal
Hard cheese specialist with heart
1923 marks the beginning of the history of the Mountain Cheese Dairy Zillertal.
Since then, the Hirschhuber family has been collecting cheese-making know-how
and hay milk from farmers in the region.
Hansjörg Hirschhuber, a cheesemaker in the fourth generation, is preparing the company for its 100th birthday with a modernization offensive. "We focus on a segment where we are strong: hard cheese. And we invest in modern communication and quality," he describes the company's path into the next century.
Secret of success. For Hansjörg Hirschhuber, the basis for success lies not only in intergenerational experience and family cohesion but also in the combination of old knowledge and new technologies, as well as long-term partnerships. Additionally, there is the gift of hearty milk and fresh spring water from the Zillertal.
The company processes 100% mountain hay milk and an increasing share of organic milk from 130 dairy farmers within a maximum of 30 km. The stars are the Zillertal mountain cheese and the Zillertal Emmental. The cheese is now offered in many countries around the globe.
Key question of sustainability. As a farmer and entrepreneur, Hansjörg Hirschhuber feels deeply rooted in Tyrol and sees sustainable action as a given. The gentle treatment of natural resources, optimization of packaging (today all are recyclable), zero waste as a goal, and long-term relationships with partners and customers demonstrate this.
