The products for the unusual vegetable cuisine come from the region: fresh vegetables from the Leutasch Valley, aromatic herbs from the mountains and colourful leaves from the garden.
The Biohotel Holzleitenon the Mieminger Plateau relies entirely on organic products - this applies not only to food and drink, but also to massage and cosmetic products and even cleaning products. In the kitchen, the team focusses on particularly gentle preparation and fresh products: This results in nutritionally conscious and creative dishes with delicious vegan options.
The Biohotel Schweitzer is also located on the sunny Mieminger Plateau and has been a real institution for more than two decades: the hotel was the first certified organic hotel in Europe and is now a place of peace and security. The deep connection with nature is the focus here, which is also reflected in the cuisine: senior chef Maria Schweitzer has specialised in vegetarian, vegan and dietary food and has even been awarded a "Green Toque" for this. Head chef Marko Köller is now continuing her culinary work.
