But the philosophy of the family goes back even further, because the actual beginning of the cheese takes place in the soil.

For this reason, the Plangger cheese dairy works closely with local farmers. After all, healthy soil grows the grass that the cows eat to turn it into the finest milk. The cows of the region give hay milk. Those who wish to use this designation must comply with strict regulations. In summer, the hay-milk cows feed on lush grasses and herbs on the pasture, while in winter they are served dried green fodder.

Natural products from Plangger
The good ingredients in the milk are taken from the soil and make their way through the cow. In the freshly milked white they are transported to the alpine dairy for direct further processing. Cheese making is a natural process and as such is subject to certain variations. For example, "summer cheese" differs from "winter cheese". The customers of the cheese dairy Plangger come from near and far to buy the cheese directly in the dairy. The store is located in Sebi, right next to the in-house rock cellar. Today, the cheese dairy is run by Martina Brunner, Anita Jäger as well as cheese master Reinhard Brunner and thus remains firmly in family hands: Martina and Anita are the daughters, Reinhard is the grandson of the founder of the cheese dairy.

Organic pioneer Herbert Plangger was also the one who had a decisive influence on the philosophy of the cheese dairy: early on, he recognized the connection between the quality of the soil and the quality of the cheese. He was one who liked to look closely and discovered a lot in the process: for example, the effect of microorganisms, which are not only crucial to the success of cheese production, but also determine the cycle of life in general.

EM products and all kinds of means for living
The Plangger cheese dairy still produces its own "microflor". A primary substance is prepared in the cheese dairy and brought to life with black molasses.
