Following on from my recipe for apple strudel, here is one for a hearty savoury dish: Tiroler Almnudeln. It comes from the team at the Restaurant Ooben at the MOOSER Hotel in St. Anton am Arlberg. Enjoy cooking along at home!

Recipe: Tiroler Almnudeln with apple sauce

Ingredients for the Tiroler Almnudeln:

  • 500 g macaroni
  • 100 g onions
  • 150 g dried belly bacon
  • 150 g potatoes (cooked)
  • 200 ml cream
  • 150 g strong cheese (grated)
  • 50 g chives
  • Salt
  • Pepper

For the apple sauce:

  • 200 ml water
  • 120 g sugar
  • 2 cloves
  • 1 cinnamon stick
  • 600 g apples (acidic variety such as Boskop)
  • Juice of 1 lemon

Cook the macaroni in salted water until al dente. Finely dice the peeled onion and bacon. Peel the boiled potatoes and cut into slices of the same thickness. Fry the bacon in a pan and add the diced onion. Fry the diced onion lightly too and then pour in the cream. Bring to the boil once.

Then add the macaroni and potatoes and thicken with the grated cheese. Season to taste with salt, pepper and chives.

For the apple sauce, boil the water, sugar, cloves and cinnamon stick for approximately 10 minutes. Place the whole apples on a baking tray, pour over the stock and braise in the preheated oven for about an hour until soft. Pass through a sieve. Flavour with lemon juice.
